I spent a ton of time with my grandparents but even as often as I saw them, it wasn’t enough. Each summer I’d go up for about a week and spend time with my grandparents doing as much or as little as we wanted. Grandpa & I walked the 3-ish miles to their park and home. Grandma and I would sew or cook. The three of us would watch TV or go to the zoo. It was such a good time and I have so many beautiful memories. Once when I was visiting, Grandma made this delicious new recipe a friend had given her – BBQ Coca Cola Chicken! Y’all. It was HEAVEN!

BBQ Coca Cola Chicken –
Ingredients:
- 8 chicken tenders (or 3-4 chicken breasts)
- 1 can (12 ounces) Coca-Cola
- 1/2 cup ketchup
- 1/2 cup BBQ sauce (your favorite)
- 1 1/2 teaspoons cornstarch
- salt & pepper to taste
- 1 tablespoon olive oil
Directions:
- Heat olive oil in a skillet over medium heat.
- Cook salt and peppered chicken until just browned on each side (roughly 5 minutes) on medium-high heat.
- In a small bowl, mix together the Coca-Cola, ketchup, BBQ sauce and corn starch.
- Gently pour over the chicken and bring to a boil.
- Reduce heat to medium-low, cover with a lid or foil and simmer for 15 minutes.
- Remove the lid or foil and continue simmering 30-35 minutes. Turn the chicken occasionally until chicken is cooked through.
- Serve with your choice of sides and enjoy!
The chicken is so tender and the BBQ sauce isn’t too overpowering. Last week I really was in no mood to cook but I pulled this recipe from the very back of my brain and whipped it up for my family. It was a huge hit and just as good as I remember it being all those years ago when Grandma made it. I served the chicken with mashed potatoes and peas but I bet it would be good over a simple salad, too! As easy as it is, if you are looking for something to throw together, try these Coca Cola Slow Cooker Meatballs!
