Turning my oven on during the summer months is miserable. Using the oven makes my home even warmer than it already is. I still want a hot meal, though. So for summer recipes, we use plenty of fresh and canned veggies for meals made on the stove-top or the grill.
I keep a large variety of canned veggies in my pantry all the time, but Hunt’s canned tomato products are essential. If I am running low, I pick up a few more cans the next time I visit my local Walmart.
I like Hunt’s tomato products because they use a unique FlashSteam peeling method. 100% of Hunt’s tomatoes are grown in California. Each Hunt’s tomato product (diced, stewed, and whole varieties) is peeled using the FlashSteam (only water, no lye) method and canned within 10 hours of picking it from the field.
I created Hillbilly Goulash (using tomato sauce & petite diced tomatoes) as the perfect summer meal! In less than 30 minutes you’ll have a delicious, veggie-filled bowl of goodness on the table!
Hillbilly Goulash
Ingredients
- 1 pound ground beef - cooked and drained
- 6 oz. elbow macaroni
- 1 tsp garlic powder
- 1 can 8 oz Hunt's tomato sauce
- 1/2 cup Hunt's petite diced tomatoes
- 1 can whole kernel corn drained
- 1/2 onion chopped
- 10 baby carrots sliced
- 3 TBSP green bell peppers diced
- 3 TBSP red bell peppers diced
- salt & pepper to taste
- shredded cheese optional
Instructions

Brown the hamburger meat with the onions, bell peppers, salt, pepper and garlic powder.

While you are browning the beef, cook the elbow noodles according to the package.

After you drain the grease from the beef mixture, add in the sliced carrots, tomato sauce and diced tomatoes. Simmer 5-10 minutes.

When the noodles are done, drain them.

Mix everything together (I do this in my noodle pot).

Serve with a little shredded cheese on top.

*NOTE: You could add more than 1/2 a cup diced tomatoes if you wanted.
Hillbilly Goulash is the easiest thing to make – and my kids always ask for seconds. If you don’t like carrots or bell peppers, take them out and replace them with peas or green beans. The sky is the limit with this dish! Because I had it in the fridge, I used shredded mozzarella for this recipe but you could use cheddar or Parmesan just as easily.
The goulash could very easily be packed in individual dishes and head to the park with my family for dinner – they’d love it!

I hated goulash as a kid (I always ate a Happy Meal the days my mom fixed it) but it’s definitely something I’d eat now. I’d be great with some cornbread. Yummy. 🙂

My husband makes a variation of this dish but he calls is something weird (Slomgolian?). I have no idea where he (or his mother before him) got that name! But, it’s delicious. 🙂
