We hadn’t seen my husband’s family for five years so it was time to visit. While we were there, his family had a pot luck dinner so we could see everyone in one place. My cousin-in-law {Janine} brought her ‘very hard’ Cheesy Chicken Enchilada Casserole.
Initially, I was a little afraid of it. It looked very simple but no one could tell me what it was. I finally decided to give it a try. I was blown away! It was so good that I had to have seconds and then forced my husband to taste it. We both agreed that this was a recipe we needed.

Cheesy Chicken Enchilada Casserole Recipe {by Janine}
Ingredients
- 1 - 12.5 ounce cans of chicken
- 1 - 15 ounce can of Green Chili Enchilada Sauce
- 1 - 8 ounce bags of Fiesta Mix Cheese
- 1 package 10 Corn Tortillas
Instructions

Preheat the oven to 350

Drain the canned chicken and mix with enchilada sauce.

In a 9x13 baking dish, layer tortillas, chicken & sauce mixture and cheese.

Bake 40-60 minutes or until the casserole bubbles.

Let cool 2-5 minutes before serving.

Cheesy Chicken Enchilada Casserole is probably the easiest dinner I’ve ever made!
The boys didn’t try Janine’s cheesy chicken enchilada casserole while we were out of town but I made it for dinner last week and they seemed to enjoy it. I should have doubled the recipe because there was nothing left in the baking dish!
