A few weeks ago, I was traveling home from Florida. I found myself starving between flights, so I sought out sustenance. I have a weakness for crepes so when I saw a restaurant with cheesecake crepes, even at 8 a.m., I couldn’t resist. It was not the best crepe I’ve ever had but I knew I wanted to re-create that recipe {only better!} at home for my family!
Last week I made my own, much better, version of the Cheesecake Crepes. To start, I made a simple cheesecake filling.
Cheesecake Filling:
- 2 packages (8 ounces each) cream cheese
- 1 can (14 ounces) sweetened condensed milk
- 1 teaspoon vanilla
- 1 teaspoon lemon juice
- Blend until smooth.
- Refrigerate before serving.
Then I chopped strawberries and pulled out a hazelnut spread.
Cheesecake Crepes [AD] #LoneStarEggs
Ingredients
- 2 cups flour
- 4 Lonestar eggs
- 1 cup milk
- 1 cup water
- ½ teaspoon salt
- 2 tablespooons melted butter
- NOTE: Add 4 teaspoons sugar if you are making dessert crepes otherwise, leave out the sugar.
Instructions

In a large mixing bowl, combine eggs and flour. Slowly add milk and water until smooth.

Add salt and butter (and sugar for dessert crepes). Continue mixing until smooth.

Add oil to a pan and heat to a medium-high temperature.

Pour about 1/3 cup of batter into the pan. Immediately tilt the pan and swirl in a circular motion so that the batter coats the surface evenly.

Cook the crepe for about 1 to 2 minutes until the bottom is light brown. Flip the crepe and cook the other side for about 1 minute.

Fill, serve and enjoy!
I thought my cheesecake crepes were amazing! Locally sourced Lonestar Eggs give the crepe great flavor – so much so that the thin pancake were just as delicious without any filling. Cheesecake crepes are filled with big flavor – just like Texans like it! My family said the crepes were okay but they didn’t care for the ingredients mixed together.
