It’s rare to see James help in the kitchen anymore. He’s ‘too old‘ to help and when I ask, he does it – but only after he rolls his eyes. It’s so much fun {ahem} to have a tween.
Colin, on the other hand, loves to help!! I appreciate his assistance and relish the time I get to spend teaching him valuable skills.
This week we made Tomato Basil Chicken.
Colin did most of the work – he cut the tomatoes and basil. Measured the olive oil, garlic and butter. I cut the ‘yucky’ parts off the chicken and then he salted and peppered them.
Tomato Basil Chicken
Ingredients
- 2-3 Chicken Breasts
- 3 TBSP Extra Virgin Olive Oil
- 1 1/2 cups Tomatoes grape or cherry, halved
- 1/2 cup fresh Basil chopped
- 2 tsp Garlic minced
- 4 TBSP butter cold
- Salt & Pepper to taste
- Shredded Parmesan Cheese optional
- 8 ounces Pasta any kind
Instructions

While the extra virgin olive oil heats in a large skillet, season the chicken breasts with salt and pepper.

Start the pasta water.

When the oil looks shiny, add the chicken (the oil should sizzle!) and cook on each side for 5 minutes.

After the first side of the chicken is cooked, turn the chicken and add the tomatoes and basil.

About 4 minutes later, add in the butter and garlic. You can also add a little more salt and pepper, if you'd like.

Finish cooking your noodles and drain off the water.

Serve the chicken over a bed of pasta and enjoy!
Dinner was SO GOOD! Both boys finished their plates of Tomato Basil Chicken and went back for a little more. I hadn’t made this meal before, but I’ll definitely put it back on the meal plan again!

This is a cool idea. We don’t allow our kids to use sharp knives yet. They’re 6 and 7. This meal looks delicious and easy to make!

It does look like a tasty dinner. I have a young teen (13) and I can totally relate to the eye rolling and what-not. I will be glad when he actually learns that it is fun to cook together.

At the age of 8 my kids had to help plan and make dinner one night a week. By the age of 12 they were each assigned one night a week to plan, shop for and make dinner. My oldest son is a much better cook than his wife and he isn’t afraid to experiment in the kitchen because he has years of experience behind him.

Oh yes! We love all of those ingredients and have them on hand most of the time. Sabrina would love to help me make it. She’s becoming quite the creative cook!
