Tomato Basil Chicken

Ingredients

  • 2-3 Chicken Breasts
  • 3 TBSP Extra Virgin Olive Oil
  • 1 1/2 cups Tomatoes grape or cherry, halved
  • 1/2 cup fresh Basil chopped
  • 2 tsp Garlic minced
  • 4 TBSP butter cold
  • Salt & Pepper to taste
  • Shredded Parmesan Cheese optional
  • 8 ounces Pasta any kind

Instructions

  1. While the extra virgin olive oil heats in a large skillet, season the chicken breasts with salt and pepper.
  2. Start the pasta water.
  3. When the oil looks shiny, add the chicken (the oil should sizzle!) and cook on each side for 5 minutes.
  4. After the first side of the chicken is cooked, turn the chicken and add the tomatoes and basil.
  5. About 4 minutes later, add in the butter and garlic. You can also add a little more salt and pepper, if you'd like.
  6. Finish cooking your noodles and drain off the water.
  7. Serve the chicken over a bed of pasta and enjoy!
