We are an egg-loving family. I make an egg-based breakfast for dinner at least once a week. And my kids would eat eggs every day for every meal, if I let them!
With Thanksgiving rapidly approaching, I wanted to come up with a creative {weekend} lunch idea to celebrate the holiday. After vetoing several of my own ideas, I settled on making Turkey-Shaped Egg Salad Sandwiches for my boys.
Turkey-Shaped Egg Salad Sandwiches with GoldRich #GoldrichYolk
Ingredients
- 6 eggs hard-boiled
- 6- ish TBSP mayo
- 1 tsp dijon mustard
- salt pepper and paprika to taste
- bread
- bacon cooked
- chocolate chips for the eyes
- orange sprinkles or carrots for the nose
Instructions

Dice the hard-boiled eggs to your liking (very thin or big & chunky, your choice!)

Mix the diced eggs with the mayo, dijon mustard, salt, pepper and paprika until everything is incorporated.

Put it in the fridge until you are ready for the egg salad.

While the egg salad is chilling, cut two slices of bread into circles (one bigger than the other).

Put the bacon under the larger bread circle.

Cover the large bread circle in egg salad.

Place the smaller bread circle on top of the egg salad.

Arrange the eyes (chocolate chips) and nose (sprinkles or carrot) on the smaller piece of bread.

Serve & enjoy!
Recipe Notes
My kids moved the bacon to the top of the egg salad, under the small circle, which worked a little better.
To be honest, I was a little worried they wouldn’t eat the sandwich because they haven’t been huge egg salad fans in the past, but James & Colin scarfed down the sandwich. It must have been turkey shape that helped? The egg salad was oh-so-good and only took about 40 minutes (because I had to boil the eggs) to make.

That is a super cute idea! I used to eat egg salad all the time as a kid, but my girls are not that enthusiastic about it 🙁 I’ll try this with a chicken salad instead.
