Tortellini salad is a super simple dish. Even better, it’s a super simple dish that takes less than 20 minutes to prepare!
1 pkg Tortellini (I use Buitoni’s Whole Wheat Three Cheese.)
1 pkg Baby Spinach
Parmesan Cheese (I use the REAL shredded parmesan, not the powder.)
Cook tortellini as directed. While your tortellini is cooking, mix the baby spinach, pepperoni and ranch (I don’t measure, I start with a small amount and mix until it looks good). Drain the tortellini. Keep the tortellini off the spinach until you are ready to eat, so as not to wilt the spinach. After you have your salad on a plate, top it with a sprinkle of Parmesan cheese.
Please note: I didn’t eat this WHOLE plate. And I got lazy and didn’t mix the dressing.
You can use anything you want in this salad – add all kinds of veggies – peppers, carrots, etc – and you could use different dressings as well. Also, leave the pepperoni out for a Meatless Monday meal.
This is a meal I do NOT have to fight my kids to eat! They will finish their entire plate and ask for seconds!
