My son’s school hosts a cookie exchange for teachers. The PTA asks parents/students to make 3 dozen cookies and send them in on a certain day during Teacher Appreciation Week. After the cookies are received, they are spread out on a table or two and teachers are given bags to fill with their favorites. It’s such a fun occasion!!
I like crinkle cookies because they are so easy to make and they make so many! Plus, crinkle cookies can be made in any flavor. For this years cookie exchange, Colin and I decided to make Strawberry Lemon Crinkle Cookies.
Strawberry Lemon Crinkle Cookies Recipe
Ingredients:
- 1 box Lemon Cake Mix
- 1 box Strawberry Cake Mix
- 4 eggs (2 for each mix)
- 12 TBSP butter, melted (6 for each mix)
- 1/2 cup powdered sugar
Directions:
- Preheat the oven to 375°
- In a two large bowls, combine all ingredients (cake mix, 2 eggs, 6 TBSP melted butter) and stir until everything is mixed together.
- Using your hands, make 1/2″ balls with the lemon dough and 1/2″ balls with the strawberry dough.
- Gently combine smoosh them together and make a 1″ ball.
- Roll the balls through the powered sugar and place on an ungreased cookie sheet.
- Bake for 9-11 minutes.
- Let cool for 5-10 minutes and then move them to a cooling rack.
- Serve and ENJOY!
The primary goal of the cookie exchange is to celebrate our teachers. But secondarily, we are encouraging our families to spend time together. Because Colin enjoys helping me in the kitchen, I didn’t have to ask twice to get his help!
I volunteered to help clean up the cookie exchange table and there were no strawberry lemon cookies left! I’d say they were a huge hit!
