Who knew there was a National Butterscotch Brownies Day?! Had I known before now, I would have been making Butterscotch Brownies for years! I want to warn you, though: these brownies DEEE-licious! Since I’m trying to eat healthier these days, I thought you should know that there’s basically nothing healthy about this recipe.
Butterscotch Brownies Recipe –
Ingredients:
- 1 package of your favorite brownie mix (plus the whatever ingredients it calls for)
- 1 brick cream cheese, softened
- 1 bag butterscotch chips
- 1/3 cup plain Greek yogurt
- 1/4 cup sugar
- 1 tsp vanilla bean paste
- 1 egg
Directions:
- Preheat the oven to 350 degrees and grease your 9×13 baking dish.
- Prepare brownies as directed on the package.
- Pour the brownie mixture into the baking dish.
- Whip the cream cheese, Greek yogurt, sugar, vanilla bean paste and egg until smooth.
- Heat the butterscotch chips in a microwave-safe bowl for 30 seconds at a time until smooth.
- Pour the heated butterscotch chips into the cream cheese mixture.
- Mix until smooth.
- Slowly spill the butterscotch cream cheese mixture over the brownie batter.
- Bake for about 30 minutes, or until a toothpick comes out clean. (If you want a less gooey brownie, bake them for an extra 15 minutes.)
- Serve and enjoy!
My husband didn’t love these brownies because they were way too gooey for his taste. My kids and I couldn’t get enough, though! I could have finished the whole tray, don’t get me wrong, but I had to say no! So after about half the tray, I sent the rest to be eaten elsewhere.

Ooooh, the gooey-ness would be awesome! I had no idea there was such a day though – good to know for next year!
