I am so lucky that I don’t have to follow a Gluten-Free diet. I still try to be pretty aware of what I am eating and how those foods effect me. I’ve read things that say wheat isn’t fully digested by humans, so I’ve started to serve it less in my home. Serving my family a gluten-free option once a week works for us – so this week I am trying something new with my Quaker Popped Chicken!
Quaker Popped Chicken: a Gluten-Free Dinner #GFWalmart
Ingredients
- 4 chicken breasts
- 1 bag Quaker Popped smashed
- 1/2 cup gluten-free mayo
Instructions

Preheat the oven to 375°

Line a baking sheet with foil.

Pour smashed Quaker Popped into a bowl.

Remove chicken from package, rinse and pat dry.

Spread GF mayo evenly over each piece of chicken.

Push each mayo-covered chicken into the bowl of Quaker Popped until all sides are covered.

Place the chicken on the foil-covered baking sheet.

Bake for 25-35 minutes.
Quaker Popped Chicken was actually pretty good! My husband and I liked the crunchy ‘skin’ on the chicken and the kids ate everything on their plates which is always a good sign. The chips come in a variety of flavors but I would stick with either Ranch or Cheddar. I used Cheddar Quaker Popped for this dish but I am excited to try the Ranch!
But what’s dinner without dessert, right? So here’s a recipe for Granola Ice Cream!
- Breyer’s Natural Vanilla Ice Cream
- Nature’s Path Granola
- Fresh berries, optional
Because I was losing daylight to photograph, I let the boys share this bowl of Granola Ice Cream before dinner. They really enjoyed it! The hubs and I had a bowl after dinner and it was incredibly tasty!

I use their granola and add it to vanilla yogurt and fruit in the mornings for breakfast. Love Quaker brand.
