Making a weekly meal plan is crucial for me because if I don’t know what I am going to make, nothing gets made! That said, I routinely make the same meals week after week – and it gets old. You will find French toast and beef tacos on our plan almost every week.
Most days, I make meals my kids enjoy but my husband and I don’t necessarily like. I love pasta but rarely cook it because my kids aren’t huge fans (unless it’s spaghetti). So a few weeks ago, I made Pasta Carbonara with peas. Something I’ve never even attempted before because it just sounded complicated! But it was a lot easier than I expected – and it only took about 35 minutes to prepare!
Pasta Carbonara with Peas #Recipe
Ingredients
- 12 oz pasta I like Rotini, but any variety will work
- 10 pieces of bacon diced and cooked
- 1/2 chopped onion
- 2 cloves garlic minced
- 3 Eggs
- 1 cup Parmesan Cheese I used freshly grated, but you can use whatever you have.
- 3/4 cup heavy whipping cream
- Salt & Pepper
- 1 can of peas I used canned organic sweet peas
Instructions

Cook the noodles as directed.

While the noodles cook, fry the bacon until it's crispy. When it's done, put the bacon on a paper towel (to remove some of the grease) and set aside. Drain most of the grease from the skillet.

Sautee the finely chopped onion & minced garlic.

In a separate bowl, crack 3 eggs, add 1 cup Parmesan cheese, 3/4 cup heavy whipping cream, salt and pepper. Whisk together.

Drain the peas& the pasta.

Slowly pour the egg mixture over the noodles, be sure to stir continuously so the mixture doesn't curdle.

Add the peas and garlic/onion.

Keep stirring until the noodles are glossy. (I put mine back over low heat for 5-10 minutes, stirring the whole time.)

Sprinkle the bacon on each serving after it's been dished.

I loved this dish! It has so many layers of flavor to it! My husband thought it was alright and the boys didn’t love it, but they tried it.

I love pasta dishes and so do my kids and husband.. i love that there are veggies in here! Great way to sneak them in the kids diet without them complaining. Also the bacon… can I say YUM?!?
