Picture this – it’s a beautiful Saturday morning, your kids haven’t fought yet today, your husband is making a fire tornado and you already have laundry running.
And then this:
Hubs: “Can I use this oatmeal canister for the tornado?”
Me: “UHHHH, that canister is FULL.”
Hubs: “I guess you’ll have to create some cookies today?”
Me: “Hmm, cookies do sound good.”
And that’s how the Peanut Butter Oatmeal Cookies were created!
Oatmeal Peanut Butter Cookies
Ingredients
- 1 cup softened butter
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs
- 1 Tbsp vanilla
- 2 Tbsp Chocolate or regular PB2
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 tsp ground cinnamon
- 2 Tbsp heavy whipping cream
- 3 cups quick cooking oats
- Optional: Nuts and/or chocolate chips
Instructions

Preheat the oven to 375 degrees.

In a medium bowl, cream together butter and sugars. Beat in PB2. Add in eggs and vanilla; mix. Add baking soda, salt, cinnamon, flour and heavy whipping cream; mix. Add in oats and mix by hand.

Scoop dough onto your cookie sheet (or into your greased muffin pan).

Bake cookie sheet cookies for 10 minutes. Bake muffin cookies for 18 minutes.

Let cool 5-10 minutes.

Please note that the Prep/Cook times and the Serves number are for regular cookies. Muffin cookies will take longer and only serve 12.
This is the muffin cookie. They are the size of cupcakes, but taste like cookies. It’s my new favorite way to make cookies!
