I enjoy cooking and baking. But I’m a little afraid of kitchen tools because I don’t want to injure myself! I’ve been trying to get over my fear by expanding the kinds of kitchen tools I use and how often I use them. KitchenIQ has some tools I recently added to my collection – Better Zester, Potato Tool and Edge Grip Knife Sharpener.
Because I acquired these new tools and I’m always looking for ways to have a girls’ night, I used my new KitchenIQ tools to do just that. I invited a group of friends over to learn about and try the Better Zester, Potato Tool and Edge Grip Knife Sharpener. Before my friends arrived, I practiced with the tools and used them to make an easy carrot cake!
The Potato Tool was incredibly easy to use and the peeler is very smooth.
I like finely shredded carrots in my carrot cake, so I used the Better Zester to shred the carrots. It took a long time to shred eight carrots but it was worth it because the carrot cake (without nuts) was amazing!

Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1 1/4 cups vegetable oil
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 3 cups grated peeled carrots
Instructions

Pre-heat the oven to 350º F.

Grease two 9-inch round cake pans flour the bottom and sides of both pans.

In a medium bowl, whisk flour, baking soda, salt and the cinnamon until well blended.

In a separate (larger) bowl, whisk the oil, brown & granulated sugars and vanilla. Whisk in eggs one at a time.

Using a large rubber spatula, scrape the sides and bottom of the bowl then add the dry ingredients in three parts. Stir gently until the batter is smooth.

Stir in the carrots.

Divide the batter between the two prepared cake pans.

Bake about 35 to 45 minutes.

Cool cakes in pans for 15 minutes before turning them out onto cooling racks.

Frost with cream cheese frosting.

I had my friends bring a knife that needed sharpening and a potato or citrus fruit. Once they arrived, they each tried using the Better Zester, Potato Tool & Edge Grip Knife Sharpener. While they tested the tools, I shared some information about the KitchenIQ tools we were using.

I need that carrot cake RIGHT NOW. Having good quality kitchen tools makes it so much easier to cook/bake, I need the Edge Grip Knife Sharpener so that I can turn my dull knives sharp again!
