When I was in middle & high school, I’d go visit my Grandparents over Spring Break. It was an awesome week of (usually) just me and them! We’d do all kinds of fun stuff – shopping, sewing, cooking, etc. And (at least once) while I was there, my Grandma would make one of my favorite meals – burnt chicken, peas and brown Minute Rice! (She always used beef broth in place of water to cook the rice.)
And here I sit, thinking, “Gosh, I really wish she were here to cook that for me!” But she can’t.
So I browsed through the Minute Rice recipes, found a few things that sounded good (but I didn’t have the ingredients for) and decided to create something similar but new. I used leftover fall-off-the-bone, OH-SO-AMAZING BBQ chicken from my sister’s wedding last weekend!
While the cream sauce simmered, I cooked brown Minute® Rice according to the package, reheated the chicken and pulled it off the bone and cooked green beans.
Cream Sauce Recipe:
Ingredients:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1/3 cup heavy cream
- salt
- pepper
- OPTIONAL: nutmeg, fresh herbs, Parmesan cheese, etc.
- NOTE: I used parsley & nutmeg. I had Parmesan cheese, but forgot to throw it in.
Preparation:
I served green beans with our BBQ Chicken and Rice with Cream Sauce. Everything was AMAZING!! I don’t know if I could make chicken as perfectly as those leftovers, but I would definitely make this again!!
