James has a new assignment every month. He usually has 3-4 weeks to complete the project. This month the assignment was to find a Mexican dish, write up a paper about where the recipe originated, how it’s evolved over time, etc., and then make the recipe for a class party.
Because I was scheduled to be out of town, we picked something pretty easy – Mexican Wedding Cookies. James was a little nervous about making them because he was cooking for his classmates, but he did a great job.
James prepped the entire recipe. The only thing I did was put the cookies in and take them out of the oven.
Kids in the Kitchen: Mexican Wedding Cookies
Ingredients
- 1 cup butter
- 1/2 cup white sugar
- 2 teaspoons vanilla
- 2 teaspoons water
- 2 cups all-purpose flour
- 1/4 cup powdered sugar
Instructions

Preheat the oven to 325 degrees.

Cream the butter and sugar together in a bowl. Add vanilla and water. Mix in the flour until blended.

Cover and chill for 3 hours.

Shape dough into balls. Place on an unprepared cookie sheet and bake for 15 to 20 minutes.

When cookies have cooled, roll them in powdered sugar.

Store at room temperature in an airtight container.

He did a fantastic job! I love Wedding Cookies but I have never attempted to make them.I am going to try these..I may add chopped pecans in the mix.Thanks for sharing 🙂
