It’s been several weeks since we’ve have breakfast for dinner. Last night I wasn’t in the mood to cook much so I called James in the kitchen and put him to work.
James was in charge of getting the bacon started. He covered a cookie sheet with foil and pulled the edges up to make a little boat. Then he placed the bacon on the foil. I put the bacon in the oven because it still kind of scares James.
(If you haven’t baked bacon before, cook it at 350* for 15-20 minutes, or until it reaches the crispiness you like.)
While the bacon was baking, I scrambled eggs and made toast.
Dinner was delicious!

We have no shame in having breakfast for dinner, the kids love it and as long as I can get them to eat that’s all that matter.
During the school year we do it at least once a week. No shame at all! 🙂
We loved baked bacon. We actually use the little slotted tray (not sure what it is called off the top of my head) that came with the oven and it works perfectly as the juices (fat) drips down and the bacon is nice and crispy!
That’s a good idea! I could use a cookie tray on top of the foil. That would work well!
We love breakfast for dinner! We do it often and yes, I even bake the bacon 🙂
We do breakfast for dinner frequently, though I’ve never baked bacon. I just got a new toaster oven so I think I’ll try that next time. Lately when we do breakfast for dinner we have french toast or pancakes, eggs, and hash browns. In the past we’ve done sausage, eggs, hash browns, and biscuits and/or gravy. I love breakfast for dinner. 🙂
Oven bacon is totally how we roll! We’ve been doing it for about a year now. It tastes absolutely fantastic; we’ll never go back to pan frying!
I just made bacon and eggs with my girls this morning. But, I do enjoy breakfast for dinner! Such a fun treat!
What fun and what a serious cook your son is! I’ve never baked bacon but it sounds lovely and so much safer than cooking it on the stove. I always make a huge brunch on Sundays but the last time we had breakfast, or brunch in our case, for dinner was over a year ago. We hosted a young lady from Rome for three months, and made brunch for dinner the night before she went home. It was a fabulous meal!
We actually just pulled out the waffle maker last week! I love that your son did it! Whenever we make waffles or pancakes Johnny always makes the batter!
We love breakfast for dinner! The 6 year old would have it every night of the week if I would agree.

I do love having breakfast for dinner but it has been awhile. I have never baked bacon before but I am going to try it next time I make it.
