Every week, as a family, we make a meal plan. Sometimes the kids get what they want (French Toast, mostly) but I have veto power and can nix anything. This week I added Slow Cooker Potatoes to the menu. The kids weren’t happy but it’s a quick, easy and cheap dinner.
To start, you need potatoes (I buy Russet) and foil.
Colin washed the potatoes for me and then set them on a towel to (mostly) dry. We came back a little later and he’d put one potato on a piece of foil for me. After I rolled the potato, he put it in the slow cooker.
Cook the foil-wrapped potatoes on low for 3-4 hours. Serve with whatever toppings you’d like.

Hmmm, I never thought to do potatoes this way. We love baked potatoes, but I don’t often have an hour to let them cook, and microwaved are just not the same. I’m giving this a try!

I asked him to help me make dinner, he told me no. I gave him puppy eyes so he said “FFFFIIIIIIIINNNNNNNEEEE.” He scrubbed the first potato, I asked if he wanted me to finish them and he said “NO! This is MY JOB!” So silly!

I’ve never done them this way but beats having to keep a very close eye on them in the stove. Going to have to try this once we have a house again.

I’ve never thought of putting them in the slow cooker! I’ll have to try it! My kids don’t like potatoes…I think I may have eaten too many while I was pregnant!

This is a great way to keep the kitchen cooler in the summer by not having the oven on. I’ve even taken my crock pot outside for cookouts with no problems.
I used to work in an office where we’d have a baked potato bar day, everyone would bring some kind of topping and we’d start the potatoes in the crock pot first thing and they were ready by lunchtime.

I love my slow cooker in the summer! We even do slow cooker meals for church picnics. Super easy – and like you said – done by lunch!
