This week my husband took off a little early to go fishing with my dad so the kids and I were on our own for dinner. I really (REALLY) considered ordering pizza or Chinese food, but I resisted. Instead, we made Bacon and Parmesan Quiche.
I started by cutting strips of bacon into small pieces (using kitchen shears) and cooking them up nice and brown.
Then, I let go of my “AH! A mess!” fear and let James crack the eggs.
He did a pretty good job and only dripped one time. Though, we did have to dig out a shell or two, and I didn’t need to scramble them very much.
While James cracked eggs, I made the crust (recipe below) and molded it into the pie pan. I added a little salt & pepper to the eggs and scrambled them with a fork. Then I let James pour the mixture in the crust.
Next I sprinkled in the cooked bacon, some Parmesan cheese and threw it in the oven.
Kids in the Kitchen: Bacon and Parmesan Quiche
Ingredients
- Crust:
- 1 1/2 cups All Purpose Flour You can substitute Whole Wheat, if you wanted
- 1/2 cup Melted Butter
- 1/2 tsp Salt
- 2 TBSP Milk
- Filling:
- 5-7 Strips of Bacon - Diced & Cooked
- 4 Eggs
- 1/2 cup Milk
- 1 TBSP Parmesan Cheese
- Salt and Pepper to taste
Instructions

In a bowl, combine all crust ingredients and mix with your hands. Press into a 9-inch pie pan - bring it up on the sides and pinch the top.

Mix all filling ingredients and pour right into the raw crust.

Bake at 375 degrees for 30 – 40 minutes or until filling is set.

I make quiche whenever we have too many eggs or leftover cream from a different recipe. And though this pizza one is tasty, I usually just chop up whatever veggies are in the fridge and grab a handful of fresh herbs. I’ve done ham, but not bacon and yours sounds delicious!

You could sub the all-purpose flour for whole wheat without a problem!

We use gluten-free flour in recipes like these. Sometimes we use non-grain flour too. It depends.
