I make breakfast for dinner at least once a week. And as much as I enjoy French Toast, waffles and pancakes, occasionally a person wants something different. Something a little more savory than sweet. Am I right? Sure, bacon & eggs are good but that doesn’t always hit the spot.
When James and I attempted to make a breakfast casserole a few weeks ago, but it didn’t turn out quite like I’d hoped. I thought I knew what it needed, so I purchased the ingredients and tried again. This time? SUCCESS!
Country Breakfast Casserole #Recipe
Ingredients
- 1 package tater tots 30-32 ounces
- 2 packages gravy 4 cups
- 1 1/2 cups turkey sausage crumbles
- 4 ounces Monterrey Jack cheese
- 4 ounces Cheddar cheese
- 1/4 green yellow, red and orange bell peppers (chopped)
- 3 slices sweet onion chopped
Instructions

Preheat the oven to 425°

Cook gravy as directed.

In a 9x13 baking dish, spread out the tater tots, turkey sausage crumbles, cheeses, bell peppers and onion.

After the gravy is cooked, pour approximately 3 cups over the other ingredients in the baking dish. (Note: Adding all the gravy will make the dish too soggy.)

Bake 25-30 minutes.

The Country Breakfast Casserole was delicious! The blend of cheeses and addition of peppers make it perfect. There is quite a bit of food – definitely more than the four of us could eat!
