When I was at the General Mills headquarters with Pillsbury the bloggers were divided into groups of 2 or 3. (My group consisted of Rachel, Jill and myself.) We were challenged to come up with a meal idea using 5 ingredients or less (garnishes not included) in under 30 minutes. But one of our 5 ingredients had to be a Pillsbury bread, biscuit or pizza.
We immediately picked the Grands biscuits. But it took a little longer to choose only four other ingredients! After a bit, we decided we were going to make Chicken Pesto Pizza Eyeballs. The Chicken Pesto Pizza Eyeballs recipe was very much a collaboration. They turned out really cute – and very delicious – so here’s the recipe!
Chicken Pesto Pizza Eyeballs #Recipe
Ingredients
- Pillsbury’s Grands biscuits
- Pesto sauce
- Fresh mozzarella you could substitute shredded
- Balsamic vinegar
- Black olives
- Roasted red peppers
Instructions

Cook chicken in balsamic vinegar – cut into thin strips.

Slice red peppers into very thin strips and cut olives in half.

Flatten Grands into circles (about 4-6 inches in diameter)

To assemble: Spread a thin layer of pesto on the center of the biscuit. Place chicken on the pesto. Put mozzarella slices on the chicken. Add a small amount of pesto in the center on the mozzarella. Arrange peppers in a ‘vein-y’ manner on the mozzarella. Place half an olive in the center of the pesto.

Bake at 350° for 12-15 minutes.

Pretty creative. The problem I have with anything like this where you are decorating a food is that I generally eat most of the decorations while I am in the process of decorating.
