My mom’s chicken and dumplings is my all-time favorite meal. It’s good when I make it, but better when Mom makes it! Either way, when it’s cold and nasty outside (like it has been on and off all winter!), this 45-minute dinner is the perfect ‘warm my soul’ meal!
It has taken my kids awhile to ‘warm up’ (haha, get it!) to eating chicken and dumplings, but now they are finally on board! My husband enjoys his soup (can we call it soup?) with crackers, but I like mine without. He also adds extra salt & pepper after his bowl has been dished.
To be quite honest, I love the flavor that the chicken gives this recipe, but I don’t actually enjoy the chunks in my bowl so I pick them out.
Chicken and Dumplings #Recipe
Ingredients
For the soup:
- 3-5 Raw Chicken Breasts cubed
- 8-10 Hard-Boiled Eggs diced
- Salt & Pepper to taste
For the dumplings:
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup shortening or butter
- 3/4 cup milk
Instructions
Dumpling Preparation:
-
Put flour, baking powder and salt into a bowl. Cut in the shortening (or butter) until it looks like meal. Stir in the milk.
How To:
-
Fill a large pot with water. Add cubed chicken, salt & pepper. Boil about 30 minutes.
-
After about 20 minutes, make your dumpling dough.
-
Drop spoonfuls of the dumpling mixture into the chicken water.
-
Cover and cook for about 15 minutes. Stir gently every once in awhile (you don't want to break your dumplings, but you don't want them to stick to the bottom of the pot).
-
Uncover, add eggs and cook another 15 minutes. Stir gently every 5 minutes or so.
-
Serve & Enjoy!
Recipe Notes
I (at least) double the dumplings recipe because that's the part everyone wants!
You could add frozen veggies before you drop the dumplings if you wanted, or serve it with a side salad.
I mostly make this meal in the winter because eating something so warm in the summer doesn’t sound appetizing, but it’s so delicious and makes me feel like I’m a kid all over again! I wish I wanted to eat it year-round!
