I’m obsessed with Starbucks Egg Bites but buying them every day (or even every week, for that matter) is out of the question since they are rather expensive for eggs. I don’t have (nor do I want) an Instant Pot or Sous Vide so I had to come up with another way to create a copycat. After a number of attempts to create my own Turkey Sausage & Gruyere Egg Bites, I’ve finally nailed it! They are OOOOOH so good!

Turkey Sausage & Gruyere Egg Bites Recipe –
Ingredients:
- 4 eggs
- 1/4 cup Gruyere cheese, shredded
- 1/2 cup cottage cheese
- 4 TBSP turkey sausage crumbles
- dash of salt & pepper
- Cooking spray
Directions:
- Put the eggs and both cheeses in a blender and mix until smooth.
- Spray each silicone egg cups with cooking spray.
- Pour the mixture evenly into the egg cups.
- Add about a tablespoon of turkey sausage crumbles to each cup.
- Screw the lids onto the egg cups.
- Fill a pot with water.
- Boil the egg cups for 16 – 20 minutes.
- Serve and enjoy!
*Note: Do not put the silicone egg cups in the microwave!
If you aren’t going to eat the Egg Bites right away, store them in the egg cups in the refrigerator. Pop them out of the egg cups before re-heating them in the microwave.
Turkey Sausage & Gruyere Egg Bites are such a fluffy, smooth, delicious breakfast choice – even your kids will eat them without a fight. Of course, you can customize them any way you’d like. Add pre-cooked veggies like spinach or broccoli, use different kids of cheeses, and/or change up the meat. Give this recipe a chance – I think you’ll love it!
