I had been trying to get myself and my kids back on a Back to School routine for weeks but it wasn’t successful at all – mostly because I’m a push-over but also because it’s hard to create a routine without the actual activities in place. But, the kids went back to school yesterday and I already know that this school year is going to be intense!
I am taking on the role of PTA president and Blessings in a Backpack coordinator at our elementary school. James is playing football and needs to be at school before the sun comes up. My husband is finishing his last term of college before graduation and we have church commitments. I have a feeling that finding a routine that works for myself and my family is going to be rocky (to say the least!). Having portable, easy to consume snacks & beverages to get through the first few weeks of figuring out that routine is going to be essential. Protein-Packed Mini Donuts and Gold Peak® Vanilla Chai Tea Lattes will be PERFECT for that, though!
How to Make Protein-Packed Mini Donuts –
Ingredients:
- 1/2 cup protein powder (your choice!)
- 1 cup pancake mix
- 1 TBSP sugar
- 2 tsp cinnamon
- dash nutmeg
- 1 egg
- 2 TBSP unsweetened applesauce
- 2 tsp vanilla
- 1/2 cup milk
- Mix-ins: chopped walnuts, chocolate chips, sprinkles, etc., optional
Directions:
- Preheat the oven to 350 degrees F.
- Toss all ingredients in a bowl and mix until everything is incorporated.
- Fill a zippered bag with the mixture.
- Snip off a corner of the bag and fill the donut spaces about halfway. (Note: if you want mix-ins, I’d recommend adding them to the cavities before filling with batter.)
- Bake 10-12 minutes or until golden brown.

.09g of protein is not high protein. You would have to eat a lot of donuts and the calories would really add up!

Exactly what I was thinking. I’d much rather keep making my protein smoothies with fresh fruit & greens… sometimes close to 30 g of protein per smoothie.
