I understand summer is over – and has been for about two months. But before I sent my kids back to school we had to have an end of summer celebration with Grandma and Geezer! (Yes, my kids really call their grandpa ‘Geezer’ and it was all his doing.)
No party is complete without food so I purchased corn on the cob, chicken and steak for the bulk of the menu.
I used an entire container of Stubb’s Sweet Black Pepper Anytime Sauce to marinate the chicken. I put the chicken in a gallon-sized zipper bag, poured the sauce over the chicken and put it in the fridge for about 2 hours. I used just a tiny bit of Stubb’s Beef Spice Rub to season the steak. It’s really as simple as it sounds. Pour as much (or as little) of the rub into your hand and smear it on the cuts of steak. Refrigerate for 30 minutes or so. I tossed the ears of corn in a sink full of water to soak about half an hour before Geezer fired up the grill.
After awhile we had (probably) the best meal of the summer. It smelled amazing and tasted even better!
We all ate more than we should have and there was still a ton of leftover food. James and Colin always have a fantastic time with Grandma and Geezer so that, paired with dinner, I’d call a success! My husband and I took the leftovers and made quesadillas for dinner the next night.
Who could resist quesadillas made with chicken and steak!?
