Last year, both of my kids were at the same elementary school. One in 5th grade and the other in Kindergarten. Most days, I felt like I had our routine under control. But with James heading off to middle school this year, I think figuring out our back to school schedule is going to be a bit challenging. I’ll need to decide what time I’ll need to leave to take each kid to school (and not get stuck in traffic), what time I’ll need to leave to pick them up (and not get stuck in traffic) and how to manage the time I have left each day. James will get out of school a full hour later than he used to so our dinner time will need to be adjusted.
In order to save my sanity during those first few weeks of fine-tuning our schedules, I’ll be making the easiest possible meals. Since eating out every day is not an option, I am thankful for Walmart and their effortless meals solutions. It was easy to find what I needed thanks to that handy red sign above the pizzas!
You can easily pick up a fully cooked rotisserie chicken or Marketside pizza to grill (or bake) as you are getting back into your school year schedules.
I decided to pick up one of each – a five-cheese pizza and a rotisserie chicken – along with the makings for a salad and beverage.
When Walmart says Effortless Meals, they aren’t kidding! One of my children loves pepperoni and the other isn’t a fan. Because my husband and I don’t have a preference, I picked up the pepperoni pizza.
About 30 minutes before it was time to serve dinner, I shredded the chicken, moved the pepperoni so it was only on half the pizza and spread the chicken over the other half of my pizza and then baked it. While the pizza was in the oven, I made the easiest Spinach Arugula salad with strawberries, feta cheese & avocado dressing. And then I finished the preparation by making cherry-lime Coca-Cola to serve with dinner.
Spinach Arugula Salad:
Avocado Dressing
Ingredients
- Salad:
- 1 store-bought package spinach arugula salad
- 1 pound strawberries quartered
- 1/4 cup Feta cheese
- Dressing:
- 1 Avocado
- 1 container about 5 oz. plain Greek yogurt
- The juice from 1 small lemon
- 3 TBSP Extra Virgin Olive Oil
- 1/2 tsp Onion powder
- 1/2 tsp Garlic powder
- Salt & Pepper to taste
Instructions

Salad:

In a large bowl, empty the contents of the spinach arugula package.

Wash & quarter the strawberries.

Add the strawberries to the salad.

Sprinkle Feta cheese over the salad.

Top with avocado dressing & mix well.

Serve and enjoy!

Dressing:

Cut the avocado in half and remove the pit.

Scoop the insides into a food processor (or blender).

Add all other ingredients and mix until smooth.
Cherry-Lime Coca-Cola:
Fill a glass with ice. Add 2 TBSP cherry juice and the juice of one small lime to your glass. Pour Coke over the ice until the glass is full. Serve and enjoy!
I know how weird cherry lime Coke sounds – and my husband pointed it out at least three times before dinner. But it was delicious!
I am sure I’ll be using this simple meal option several times a month because it was convenient to purchase, provided my family with a healthy, fresh dinner and everyone enjoyed it. I’ll probably swap the strawberries for apples as we move into fall, though.
