I am always looking for dinner recipes that are easy to make and delicious to eat. When I told my husband that I wanted to add “Dirty Rice” to the dinner menu, he looked at me like I had four heads and told me he didn’t like it. But you know what? I added it anyway.
I’d say the hubs liked it (he had TWO bowls!) but he told me he’d give it a 6 on the 1(bad)-10(good) scale. The kids said it was spicy (I do not enjoy spicy food, so I don’t make it that way) but still managed to eat pretty well. And I thought it was pretty tasty!
It’s definitely something I’d add to our dinner menu again!
Quick and Easy Dirty Rice #Recipe
Ingredients
- 1 link Eckrich Turkey Smoked Sausage you could use any kind, this is what I bought
- 1/2 green bell pepper diced
- 1/2 red bell pepper diced
- 1/2 medium sweet onion diced
- 1 3/4- ish cup chicken broth
- 1/2- ish cup long grain rice
- 1 tsp parsley flakes
- salt & pepper to taste
Instructions

Chop up the sausage link and brown.

Add diced veggies, rice, chicken broth and spices.

Bring to a simmer & cover for 18-20 minutes.

(You can tell it's done when most of the broth has been absorbed.)

This looks great! I have leftover Italian sausage in the frig I was trying to decide what to do with, and this would be perfect for using it up.

I’ve never tried making dirty rice from scratch, always from a box but it is a spicy dish. Healthy though and definitely a nice change.

I make a similar dish right in my rice cooker, using turkey kielbasa and whatever veggies I have on hand; I just toss it all in and all dinner needs is a side salad. I love the way your version looks with the green and red peppers, and I bet it tastes great, too. This one-pot meal is one of my go-to dinners.
