Truth be told? I was not a fan of pumpkin anything until this year when I made the most amazing Pumpkin Cheesecake Cupcakes and my life changed. Now I can’t get enough! That’s when I decided I needed to make a fall pumpkin cookie and now we have Pumpkin Spice Oatmeal Cookies!

Pumpkin Spice Oatmeal Cookies –
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 cups oats
- 1/2 teaspoon baking soda
- 2 teaspoons cornstarch
- 1/4 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1/2 cup butter, softened
- 1 egg
- 1/4 cup sugar
- 3/4 cup brown sugar
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1/4 cup fall leaf sprinkles
- 1/4 cup mini chocolate chips, optional
Directions:
- Preheat the oven to 350* F
- Line a cookie sheet with a silicone mat.
- Mix together the flour, oats, baking soda, cornstarch, salt and pumpkin pie spice.
- In a mixer, cream the butter and sugars.
- Add in the egg, pumpkin puree and vanilla. Whisk until smooth.
- Pour in the dry ingredients and mix until just combined.
- Fold in the sprinkles and optional chocolate chips.
- Using a cookie scoop, place the dough on the baking sheet.
- Bake for 10 – 12 minutes.
- Allow to cool a bit, serve and enjoy!
These cookies don’t spread much but they are perfect little balls of deliciousness! Soft, chewy and best served a little warm. I’d almost be willing to say that kids won’t even be able to tell they have pumpkin in them.
