I love, love, love cupcakes! They are my favorite thing to make and eat! While I can make an awesome cupcake, I am still working on mastering frosting. Thankfully, Cool Whip now makes frosting!
I took stock of what I had and what I would need to make cupcakes. My husband was home, so we loaded up the boys and headed to Walmart! We had to get pudding and Cool Whip Frosting first, that way we wouldn’t leave without what I needed!

When we got home it was late so after putting the kids to bed, I whipped up some Pudding Cupcakes (recipe below). I let the cupcakes cool for 15-20 minutes, tasted one (YUM!!), covered and put them in the fridge with the Cool Whip Frosting.
The next morning I scooped the frosting out of the tub and into a zipper baggie. I snipped a tiny triangle off one of the corners and piped frosting onto my cupcakes. (If you haven’t tried this icing trick, you should! It’s AMAZING and super-dooper easy!!)
They look delicious, don’t they?! They were! (However, the cupcake becomes more dense once it’s refrigerated.)
Both of my kids enjoyed the cupcakes! My husband wasn’t a fan, but what does he know?! 😉

I really don’t think you can taste the pudding flavor in them. These tasted like pound cake, but fluffier!
