Since going soy-free a few weeks ago, we’ve realized how little food is made withOUT soy. Everything has soy – from store-bought bread to spaghetti sauce to cookies. I challenge you to look at the ingredients list of five items in your pantry. How many of those five items have soy in them? My guess is all five.
I’ve always made our cookies from scratch, but shortening and chocolate chips have soy in them. Use butter instead of shortening and Enjoy Life chocolate chips and we are back in business!!
Mini Chocolate Chip Cookie Cupcakes Recipe –
Ingredients:
- 2 1/4 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1 and 1/2 sticks butter, softened
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 2 tsp vanilla extract
- 2 large eggs
- chocolate chips
NOTE: The no-soy version tastes just as good as the regular!
Directions:
- Preheat your oven to 350 degrees
- Mix sugar, brown sugar and butter until creamy.
- Add eggs and vanilla; beat until smooth.
- Add flour, baking soda and salt; mix until everything is incorporated.
- Fold in some chocolate chips. (I never measure, but I would guess I use 1/2 cup or less.)
- Use a small ice cream scoop and put one scoop in each opening of a lined or well-greased mini-muffin pan.
- Bake for 13-16 minutes.
- Allow to cool for at least 10 minutes before removing from the pan.
- ENJOY!!
Call them deep-dish cookies or mini cookie cupcakes, either way, they could absolutely be frosted. However, we really like them plain. Store them in an air-tight container until they are all devoured.

These look good! The chocolate chips look like the perfect touch. We have gluten-free, dairy-free and nut-free family. I hope we don’t have to go soy-free too. I think I’d only be able to serve water!
