This year I felt the need to participate in the Great Food Blogger Cookie Swap. I know what you are thinking – and NO, I am not technically a food blogger BUT I do love to cook/bake and I have shared the occasional recipe, so why not?!
Each blogger pays the mandatory participation fee (which goes to Cookies for Kids’ Cancer) and then we share our information. After the registration deadline, we are given 3 names and addresses (along with food allergies) so that we can all swap cookies! Cool, right?
I debated over what I wanted to make, but finally decided to make Hot Cocoa cookies!
Hot Cocoa Cookies {#Recipe}
Ingredients
- 1 cup butter room temperature
- 1 cup light brown sugar packed
- 1 cup or 6 packets hot chocolate mix with marshmallows - optional
- 2 eggs
- 1 tbsp vanilla
- 1/2 tsp salt
- 1 tsp baking soda
- 2 cups all-purpose flour
- OPTIONAL:
- 1/2 cup chopped Andes Mints or 1/2 cup Marshmallow Bits Kraft
Instructions

Preheat the oven to 350°

Cream butter and brown sugar

Add hot chocolate, eggs & vanilla. Continue mixing.

Add salt, baking soda & flour and mix well.

If you are going to use optional ingredients, now's the time to add and mix them in.

Bake for 9-11 minutes. (I use a Silpat, but it's not required.)

Cool on a wire rack.

Hot Cocoa cookies are a soft, creamy, cookie. I think they are delicious (but better warm!) and perfect for the cooler weather we’ve been having in South Texas!
With OXO, Dixie Crystals, Gold Medal Flour and Grandma’s Molasses matching our donations dollar for dollar, the other bloggers and I were able to raise $13,778.40 for Cookies for Kids’ Cancer!!
