Y’all. I have the world’s biggest sweet tooth. I’ve done a pretty good job of eating healthier and losing weight but I still have a ways to go. Once I hit my goal, I’d like to stay there and not re-gain everything I’ve worked so hard to lose. In order to do that, I’m trying to find better dessert options which is where this Easy Paleo Brownie Recipe comes in!

I have to say, when I attempted this recipe the first time, I didn’t think I’d call it ‘easy’ but once I figured out the trick, it was super simple.
Paleo Brownie Recipe –
Ingredients:
- 4 ounces of semi-sweet chocolate
- 8 tablespoons (1 stick) butter
- 1 cup coconut sugar
- 1/2 cup tapioca flour
- 2 eggs
- 1 teaspoon vanilla bean paste (vanilla extract will work if you don’t have vanilla bean paste)
- 1/2 teaspoon salt (optional)
Directions:
- Preheat your oven to 400 degrees.
- Melt the chocolate and butter together in the microwave, 30 seconds at a time.
- Whip the eggs and sugar in bowl and mix until silky. (The trick: whisk the eggs & sugar until fluffy. If you don’t, the brownies will be a crumbly disintegrating mess.)
- Mix the vanilla bean paste into your sugar/egg mixture.
- Combine the melted chocolate/butter mixture into the sugar/egg mixture and stir until incorporated.
- Add the flour and mix well.
- Pour the batter in an 8×8 baking pan.
- Bake for 25 minutes, or until a toothpick comes out clean.
- Serve and enjoy!
These brownies are super-dooper rich. So much so that I couldn’t eat all of one small square but they definitely satisfied my sweet tooth!
