All the components that make for a great breakfast can be used to make for a great dinner. I was asked to create a non-breakfast recipe using Ore Ida shredded hash browns, and I am always up for a challenge! My mom makes this cheesy potato dish using hash browns, and while it’s delicious, it’s full of artery-clogging ingredients! I looked over her recipe and changed it to make it my own: Cheesy Veggie & Hash Brown Casserole!

Ingredients
- 1 package 30 oz. Ore Ida shredded hash browns
- 8 oz. shredded cheddar cheese
- 1 container 17.6 oz Greek yogurt
- 1/2 of a sweet onion – chopped
- 3/4 of a red bell pepper – chopped
- 1/4 of a green bell pepper – chopped
- 1 packet of Ranch mix
- salt & pepper to taste
Instructions

Preheat the oven to 425°

In a 9×13 baking dish, spread out the hash browns and bake for 20 minutes.

Mix in Greek yogurt, cheddar, ranch, veggies, salt and pepper.

Bake for 25-30 minutes or until cooked through.

Recipe Notes
You can use whatever veggies you want. Squash, broccoli, cauliflower, zucchini, etc. Get creative!
Last weekend, my Wal-Mart hosted an in-store demo featuring Ore Ida products. I made my way over to see what they were making and to purchase the items I needed to make my dinner casserole. I watched as they made Cheesy Potato Casserole and then sampled it.
This Cheesy Potato Casserole is healthier than my Mom’s version.
Ingredients
- 1 (10.5 oz.) condensed cream of chicken soup
- 2 Cups Sour cream
- 1 Teaspoon Salt
- 1/4 Teaspoon Ground black pepper
- 2 Cups Shredded cheddar cheese
- 1/3 Cup Sliced green onions
- 1 Package (30 oz.) Ore-Ida® Shredded Hash Brown Potatoes
- 2 Cups Crushed corn flake cereal
- 1/4 Cup Butter, melted
Directions
- Preheat oven to 350°F. Coat 13×9 baking dish with nonstick cooking spray.
- In a large bowl, whisk together soup, sour cream, salt and pepper. Stir in cheese, onion and hash browns until well mixed. Spoon evenly into baking dish.
- In a medium bowl, mix together cereal and butter. Sprinkle evenly on top of hash brown mixture.
- Bake uncovered for 45 to 50 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving. Season with additional salt and pepper to taste if desired. Garnish with additional sliced green onion if desired.

The yogurt is an unusual addition to a casserole. I like casseroles because they are easy to make and are a great way to clear out some space in the cupboard.
