Egg salad is one of my favorite easy meals but my kids don’t really enjoy it. They also don’t really enjoy plain chicken salad so I’ve had to get creative with it. Buffalo Chicken Salad is something James has come to love! If I make it, he’ll take it for lunch at least three days a week. It’s a simple meal and he can change it up each time he takes it.
Buffalo Chicken Salad Recipe –
Ingredients:
- 3 tbsp Franks Original Red Hot Sauce
- 3 tbsp Mayo
- 3 tbsp Ranch dressing
- ¼ tsp garlic powder
- 2 ¼ cups cooked chicken, shredded
- ¼ cup celery, diced
- ¼ cup red onion, diced
- ½ cup carrots, shredded
- 3 green onions, chopped
- Blue cheese crumbles
Directions:
- Cook and shred the chicken.
- While the chicken is cooking, mix together the hot sauce, mayo, ranch and garlic powder in a bowl.
- Add the cooked chicken, celery, and red onion to the mixture and flod together until well combined.
- Top with blue cheese crumbles, carrots and green onion.
- Optional: Add more hot sauce to the top for a bit more heat.
- Serve and enjoy!
There’s really no pretty way to photograph chicken salad. So this might not look appetizing, but it is!
Buffalo Chicken Salad can be served in a number of ways – on your favorite bread, in a lettuce wrap or over a bed of salad. Any way you eat it, though, it’ll be delicious!

We do a plain chicken salad but I bet my kiddo would love this – she loves cheese and a little kick!
