When I married Larry, he came with a few family recipes that he just loved. I added them to my recipe file. In the past few months, I’ve been changing our eating habits and making healthier meals. Here is the updated version of Broccoli, Ham and Cheese Casserole!
Broccoli, Ham & Cheese Casserole #Recipe
Ingredients
- 12 ounces Noodles
- 1 head Broccoli chopped
- 1 pkg Shredded Cheddar Cheese divided - 1/4 bag for top, 3/4 bag for casserole
- 1 1/2 cups diced Ham
- 1 7oz pkg Plain Greek Yogurt
- 1/2 cup Milk
- 12-15 crumbled Ritz Crackers optional
- Pepper to taste
Instructions

Cook and drain noodles.

Dice the ham and chop the broccoli.

Mix all ingredients in a 9x13 baking dish, top with 1/4 bag of cheese and crumbled Ritz Crackers.

Bake at 350 for 20-25 minutes.

Recipe Notes
Ritz Crackers are optional - I don't always use them, but they do add a good flavor.
This recipe used Mayo before I swapped that out for Greek Yogurt. If you use Mayo, it calls for 1/2 cup.
You can use more or less ham, depending on what you like.
My kids don’t love broccoli, so I chop it in teeny-tiny pieces that can’t be picked out very easily. My mother-in-law’s recipe called for mayonnaise but I knew there had to be a better way so I swapped it for Greek yogurt. (Just make sure you buy plain!)
Broccoli Ham & Cheese Casserole is an easy meal and makes our meal rotation at least once a month. I hope you’ll give it a try!

You could probably do cauliflower since it would blend into the noodles! But I haven’t ever tried it that way.

Made this according to directions despite my best judgement, as I didn’t see how the broccoli would cook without more liquid or covering the dish to steam it. It didn’t and was still crunchy even though I chopped it in what I considered to be small pieces. Because a “bag of shredded cheese” is not a standard unit of measurement – mine was 11 oz – I needed to guess at the amount of cheese. I played with the amounts until it looked and tasted good to me and the result was okay. For our taste, it needed more flavor, perhaps onion, garlic or mustard, as we considered it to be a bit bland. Will need to think about trying again with modifications when I have left over ham. Will blanch the broccoli and add more flavor.
