I am going to let you in on a {shocking} secret — I don’t like pie! I know, I know, but I just don’t! I like the filling and I like the crust, but not together. So when I got Grandma Hoerner’s pie filling, my mind started spinning. What could I do with these BESIDES make pies.
Our day to bring church breakfast was coming, so I made Spiced Peach Pop Tarts. And they were really good. James even asked if he could have them for breakfast the following week.
But I still had a jar of apple pie filling. Then I had an idea … cupcakes made with pie filling! Not filled cupcakes, but rather, using the filling in the batter. BRILLIANT, right?! 😉
Apple Pie Cupcakes #Recipe
Ingredients
- 2 cups sugar
- 1 cup butter softened
- 4 eggs
- 1 Tbsp vanilla
- 3 cups flour
- 1 Tbsp and 1/2 tsp baking powder
- 2 cups pie filling
Instructions

Soften the butter.

Preheat the oven to 350 degrees.

Blend sugar, eggs and vanilla together. Add in softened butter. Mix well.

Dump in flour and baking powder. Mix well.

Add pie filling; blend until smooth.

Bake cupcakes for 20-25 minutes.
These cupcakes are not overly sweet. I had a jar of white (store bought) frosting in the pantry, so that’s what I used.

Were they good with the frosting? I would think they’d be good without or with a streusal topping. yum!

My husband said the cupcake was perfect – but the icing was a little weird. I thought cream cheese would have been better, but he said no. Streusel topping would be awesome!
