I’m obsessed with Justin’s cinnamon almond butter these days. I usually spread it over apple slices but wanted to make something a little easier to munch on. I made the best Cinnamon Almond Butter Cookies and just cannot get enough! They are the softest, tastiest cookies I’ve had in a long time.

Cinnamon Almond Butter Cookies –
Ingredients:
- 1/2 cup salted butter softened
- 1/4 cup granulated sugar
- 1/2 cup firmly packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 – 1 1/2 cup Justin’s Cinnamon Almond Butter
- 1 tsp baking soda
- 1/2 tsp baking powder
- 3/4 tsp salt
- 1 1/2 cups all-purpose flour
- Cream cheese frosting
Directions:
- Preheat the oven to 350.
- Using a stand mixer, cream together the butter, sugar, and brown sugar, until light & fluffy.
- Mix in the egg and vanilla, until combined.
- Whip in the cinnamon almond butter until smooth.
- Combine the flour, baking soda, baking powder, and salt into the wet mixture, until just incorporated. Do not overmix.
- Use a cookie scoop to put the dough directly onto a Silpat lined baking sheet.
- Bake for 9-11 minutes, until the edges are golden, but the middle is still soft.
- Allow the cookies cool for a few minutes before eating.
- Drizzle with cream cheese frosting.
- Serve and enjoy!
I shared a batch of these cookies with the staff at my son’s school and before I’d arrived home, I had a text saying they were ‘The best cookies I’ve eaten in my life!’ which made me feel SO proud about myself. And, truth be told, I could eat a whole batch of these cookies in one sitting – they are THE BEST!
