Depending on how it’s made, Strawberry Shortcake can be one of my family’s favorite desserts. If you have a friend or family member that enjoys the dessert, these strawberry shortcake pudding cookies are sure to hit the spot!
The cookies are simple to make, too, which is good because I only bake when it’s easy!
Strawberry Shortcake Pudding Cookies
Ingredients:
1 cup butter, room temperature
1 cup powdered sugar
1 teaspoon vanilla extract
2 eggs
2-1/4 cups all purpose flour
1-3.4oz box french vanilla instant pudding mix
1 teaspoon baking soda
1/2 white chocolate morsels
1 package Strawberry Shortcake flavored M&Ms candies (found at Target)
Directions:
- In the bowl of an electric mixer, beat butter, powdered sugar and vanilla until light and fluffy.
- Add egg and whisk until combined.
- Using the paddle attachment, turn the mixer on low and slowly add the flour, pudding mix and baking soda. Mix until combined. Add white chocolate morsels and stir until combined.
- Refrigerate dough and heat oven to 375 degrees F.
- Line a baking sheet with parchment paper.
- Use a medium sized cookie scoop to scoop out the dough into balls and space 2 inches apart on the baking sheet.
- Press the M&Ms candies randomly on top of the cookie dough balls.
- Bake 10-12 minutes, just until golden brown on the edges.
- Cool for 1 minute on the pan then transfer to a wire rack to cool for 30 minutes.

I didn’t even know there WAS an M&M Strawberry shortcake flavor. What will they think of next? I bet these are delicious and a lot less messy than regular strawberry shortcake. 🙂
