Baked Eggs in a Hash Brown Nest #GoldRichYolk

Ingredients

  • GoldRich Eggs - 1 for each nest you make
  • ½ cup shredded cheddar cheese + 1 TBSP for topping
  • ½ cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Crumbled bacon or diced turkey sausage optional
  • ½ TBSP parsley

Instructions

  1. Preheat the oven to 425°
  2. Mix hash browns, salt, pepper, olive oil, ½ cup mozzarella cheese and ½ cup cheddar cheese in a mixing bowl.
  3. Grease a muffin pan and use your fingers to pack the hash brown mixture tightly to form nests in the pan.
  4. Bake for about 15 minutes or until the edges have browned and the cheese has melted.
  5. Decrease your oven to 350°
  6. If you are going to add bacon or sausage, put it in the bottom of the nest.
  7. Then crack one GoldRich egg into each nest and add salt and pepper (to taste), a few shreds of cheddar cheese and a sprinkle of parsley.
  8. Bake at for 15-20 minutes or until the egg whites are set.
  9. Let it cool.
  10. Use a fork to gently lift the egg nest out of the pan.
  11. Serve and ENJOY!
