Macaroni Salad #Recipe

Ingredients

  • 4 cups macaroni noodles
  • 2 cups Greek yogurt I use FAGE Total 2%
  • 2 TBSP mustard
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 onion chopped
  • 1 stalk celery chopped
  • 1/2 red pepper diced
  • 2 carrot sticks grated
  • 1/2 can whole kernel corn optional

Instructions

  1. Cook macaroni as directed.
  2. Drain, pour into a large bowl, let cool.
  3. While the noodles are cooling, chop the onion, celery, red pepper and grate the carrots.
  4. Add Greek yogurt and mustard to the noodles, mix well.
  5. Add the chopped veggies, salt & pepper. Mix well.
  6. Refrigerate several hours, serve cold.
  7. NOTE: If you want to use the whole kernel corn, drain the can and add when you add the rest of the veggies. (I forgot to buy the corn for this recipe, which is why you don't see it, but it'll add a sweet crunch to the salad!)
