Caramel Cheesecake with a Brownie Crust Recipe

Ingredients

  • 1 package brownie mix or home-made
  • 1 - 12 oz. container cottage cheese
  • 1 - 8 oz. pkg cream cheese softened
  • 3 eggs
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 can Nestle La Lechera Dulce de Leche Caramel

Instructions

  1. Cook brownie mix as directed.
  2. Spray a pie dish with PAM Cooking Spray.
  3. Crumble warm brownie and press into the pie dish.
  4. Preheat the oven to 350°
  5. In a blender or food processor, add cottage cheese, softened cream cheese, eggs, sugar and vanilla. Mix until smooth.
  6. Pour over the brownie crust.
  7. Bake 35-45 minutes (or until the center is set).
  8. Let it cool on a wire rack.
  9. Cover & refrigerate at least four hours.
  10. Gently 'frost' the top of the cheesecake with caramel.
  11. Serve and enjoy!
