Kids in the Kitchen: Cow Tales Cupcakes {and a #Giveaway}

Ingredients

Buttermilk Cupcakes:

  • 6 tablespoons butter softened
  • 1 cup plus 2 tablespoons sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup buttermilk

Caramel Cream Cheese Frosting:

  • 8 oz package cream cheese softened
  • 2 cups powdered sugar
  • 3 TBSP heavy whipping cream
  • 10 Cow Tales

Instructions

Cupcakes:

  1. Preheat the oven to 350°
  2. Beat butter and sugar until well blended.
  3. Add eggs and vanilla and beat on high speed until combined.
  4. Sift flour, baking powder, and salt into a separate bowl.
  5. With mixer on low speed, beat about 1/3 of the flour mixture into butter mixture, then about a 1/3 of the buttermilk. Repeat until everything is well blended.
  6. Bake 20 to 25 minutes.
  7. Cool completely before frosting.

Frosting:

  1. In a microwave safe bowl, heat Cow Tales and 1 TBSP whipping cream until melted and smooth.
  2. In a separate bowl, combine soft cream cheese, 2 TBSP whipping cream and powdered sugar.
  3. Mix until smooth.
  4. Add in Cow Tales mixture and beat until smooth.
  5. Pipe onto the cupcakes.
  6. When all the cupcakes are frosted, unwrap additional Cow Tales and add them to the frosting.
  7. Serve and ENJOY!
