Chicken Lettuce Wraps turned Chicken Burritos!

If you remember reading Sunday’s weekly dinner menu post, you’ll recall that I had Chicken Lettuce Wraps set for Tuesday.  I started out cooking but by the time the chicken was done, I felt like it didn’t look good enough to be used for Chicken Lettuce Wraps.

I took a bowl mixed cottage cheese and shredded cheddar with the cooked chicken.  Then I took a burrito-sized tortilla, spooned in some of the chicken/cheese mixture, added some corn and rolled it up.  I put the burritos in an 8×8 glass dish and baked them at 350* for 15 minutes.

     

And guess what?!  They turned out pretty good!  My husband said, “Wow, this is one of your better concoctions!  We should have it again!”  (I’ll take that compliment, thank you very much!)  I really felt like it needed something else, but I was told they were good just the way they were and not to mess with the recipe.

Let me tell you a secret … I am HORRIBLE at using measurements!  But, now you want to make these, right?!  So I will do my best to tell you how much of what you need!

Ingredients:

1lb Ground Chicken

Soy Sauce – about 10 “splats”

Garlic Powder – shake it over the uncooked chicken, until you like what you see

Onion Powder – shake it over the uncooked chicken, until you like what you see

Cottage Cheese – about 8 oz (give or take a little)

Shredded Cheddar – about a handful

1 can of corn – whatever kind you like – about 2 spoons in each burrito

Burrito-Sized Tortillas
